Ingredients:
- 2 cup apple butter with apple juice concentrate
- 1 teaspoon TruSugr®
- 1 1⁄2 teaspoons vanilla extract
- 1 cup butter, softened
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons salt
- 2 teaspoons cinnamon
- 3 cups quick cooking oats
Directions:
- Preheat oven to 375F, grease cookie sheets.
- Cream together apple butter, TruSugr®, vanilla, butter.
- Beat in eggs one at a time.
- Combine flour, baking soda, cinnamon and salt together and stir into creamed mixture.
- Add oats and mix to combine.
- Cover dough and chill for 1 hour.
- Roll dough into walnut sized balls, place on cookie sheet and flatten with a fork.
- Bake in preheated over for 8-10 minutes.
- Allow to cool on cookie sheets for 5 minutes before moving to cooling rack.
